Pumpkin, a traditional flavor during the fall and winter months is not only full of beta carotene, but other healthy nutrients to help you live a healthy life. The problem arises when we add excessive amounts of sugar and fat to our pumpkin dishes, especially dessert dishes. The additional sugar and fat calories cancel out the healthy benefits found in pure pumpkin, leaving you with a pumpkin flavored nutritional disaster. In this episode of Healthy Cooking with ProMedica, Nathan Drendel, ProMedica's Wellness Dietitian takes two sweet pumpkin treats and puts a "better-for-you" spin on them, a nutritionally improved pumpkin roll and a light pumpkin dip, perfect for get-togethers.
