Holiday Pumpkin Bread
How to make Holiday Pumpkin Bread
Ingredients
1 1/2 cups of all purpose flour
1 tsp of baking soda
1 tsp of pumpkin pie spice
1/4 tsp of baking powder
1/2 tsp of salt
1/3 cup of chopped pecans
1/3 cup of raisins
1/4 cup of butter, softened
1 cup of sugar
3 eggs
1 cup of canned pumpkin
1/4 cup of orange juice
1/2 tsp of vanilla
Instructions
1. In medium bowl, stir together the flour, baking soda, pumpkin pie spice, baking powder and salt.
2. To a seprate bowl, add the pecans and raisins and mix with 1 tablespoon of the flour mixture.
3. In a large mixing bowl, at medium speed, beat together the butter and sugar until light and fluffy.
4. Beat in eggs, canned pumpkin, orange juice and vanilla until well blended.
5. Add remaining dry mixture to pumpkin mixture and beat at low speed until thoroughly blended.
6. Stir in reserved pecans and raisins.
7. Lightly grease a 9 x 5 x 3-inch loaf pan.
8. Pour in batter.
9. Bake in a pre-heated 350 F oven until lightly browned and a toothpick inserted in the center comes out clean-about 60-70 minutes.
10. Cool on a wire rack for 10 minutes.
